This is done by modifying the version.h file in the OpenSSH distribution and recompiling. Change the SSH_VERSION and SSH_PORTABLE #define lines to anything you like, such as:

1. define SSH_VERSION "MyCompany_Vers00001"
2. define SSH_PORTABLE "foo"
